Healthy Filipino Foodhack 002: Chicken Mango Kalokohan

 



Kalokohan is one of my favorite and most familiar Tagalog words. It’s also one of the most familiar as I heard it a lot growing up.  Translation: Craziness, hijinx, shenanigans
  
This is the result of some of my culinary intuitions, or “hey you know what would be good with this” masochistically curious palate.
 
        Red onion, garlic, ginger, red peppers, organic heirloom tomatoes, diced fresh mango, diced dried mango, green beans, green onions, raw apple cider vinegar, mango nectar, splash of vodka (sake last time), chicken thighs.

Healthy Filipino Foodhack 001: Quinoazzcaldo - quinoa-based lugaw)

Arroz caldo on the Spanish tip. Congee on the Chinese tip.  Lugaw on the Malay (?) 

Hot rice porridge with garlic and ginger. 

Great for the immune system.

Easy to eat, and especially when it’s cold, or you’re feeling sick - it’s heavenly. But that’s just too much rice to eat so fast.

To de-carbify it I use quinoa instead of rice.  So it’s also packed with protein.  And yes, if you let it cook enough it does congee-l.  Chicken thighs are preferable to chicken breast because the thigh meat doesn’t dry out.

Garnished with slices of hard-boiled egg, toasted garlic, green onions, patis, lemon, himalayan salt.
